Pimento Cheese: Where Have You Been All My Life?

After I moved to Texas, I learned about a southern staple – this thing called pimento cheese. It isn’t a dip, but a sandwich filling or a little spoonful of delight placed atop a cracker and served with dill pickles and pickled onions on the side. Someone I know very well had a store-bought container of this stuff in the fridge and so, always trying new things, I took a taste. And, I hated it. It was mushy and weird, from the texture to the taste. I swore off pimento cheese, that is until I tried a homemade version of the recipe. Then I fell in love. I promptly put myself to work to create a recipe to make for myself and all who wish to indulge in this simple, ingenious staple.

Pimento Cheese

Pimento Cheese


1 – 8 oz. block of cream cheese
1/2 cup mayonnaise
1/8 tsp. garlic powder
1/8 tsp. onion powder
1/8 – 1/4 tsp. cayenne pepper
1/2 tsp. chili powder
1 jar pimento peppers, drained
2 cups Colby jack cheese, shredded
In a mixer, blend cream cheese, mayonnaise, and spices together until smooth. Stir in pimentos and cheese. Cover and store in the refrigerator until ready to serve. Eat on a sandwich or with crackers and pickles.
